Tuna (Super Frozen)
Most of the ultra-low temperature toro products in the United States come from European countries such as Spain, Republic of Malta, Turkey and Croatia. The characteristics of tuna are different in each region. We mostly procure our toro from Croatia, which is known for its most premium fat contents.
We also procure and supply southern bluefish toro from the Indian Ocean, whose toro have a well-established reputation for their mildness. Their southern bluefin has less fat contents than other bluefin, however, we carefully examine and select our fish at each lot and have devised our own methodology to maximize the yield for premium toro. We process our fish with our original methods to make it easier for restaurant chefs to handle them.
What is ultra-low temperature tuna?
Ultra-low temperature (-58 °F/-50 °C) is the most effective temperature for long-distance transportation and long-term storage of tuna.
Advantages of ultra-low temperature:
- Hard for bacteria and virus to grow.
- Minimal formation of ice crystals from the moisture of the fish, which would break down the food tissue.
- Maximizes the preservation of freshness, color and umami.
Effects of Ultra-Low Temperature
Even in frozen storage at 0 °F, food changes over time. Deliciousness and texture quality declines, vitamin C level diminishes, fades and redness of lean tuna darkens. Those effects are due to chemical reaction (oxidation) of food components over time. Such changes can be minimized by having the storage temperature as low as possible. In case of tuna especially, if it is stored at ultra-low temperature at -76 °F and if there is no temperature fluctuation, bright red color and taste can be retained for a long time.
When food is frozen, moisture within the food crystalizes. These ice crystals absorb smaller surrounding ice crystals and steadily grow larger during refrigeration and break the food cells apart, causing the food quality to deteriorate. In a lower temperature storage, ice crystals grow slower. When the food is stored at ultra-low temperature, the growth of ice crystals is suppressed. As cell destruction is minimized, the amount of drip (meat juice) at the time of thawing is also kept at a minimum. Therefore, deterioration of food quality can be prevented.
Thawing Instruction
Please refer to the instruction below for thawing ultra-low temperature tuna. It is the most effective procedure to preserve the taste while defrosting.
(* Depending on the quality of frozen tuna, there may be some unevenness in the thawing result.)
Super Low Tempurture Chest Freezer
An Ultra-Low Temperature Chest Freezer is recommended for storing ultra-low temperature tuna. Unlike a general freezer, it supports freezing of products down to -49 °F. Thus, long-term storage is possible without degrading the quality of food.
For your convenience, ultra-low temperature chest freezers below can be purchased through us. Please contact us for more information.
